Check out this Chakra Balancing Salad, full of fresh vegetables! A potluck crowd-pleaser — sweet, nutty, crispy, and crunchy — a dense five-vegetable salad with an apple cider vinegar–peanut dressing.
It’s important to use dressings with healthy oils, which increase your body’s ability to use the nutrition in the raw vegetables and the fat-soluble vitamins A, D, E, and K. The oils in this salad are all balanced, coming from a wonderful combination of nuts, seeds, and avocados. The dressing “makes” this salad — and it’s only 30 calories per tablespoon!
Chopped vegetables
- 4 cups purple cabbage, chopped or finely shredded
- 1 red pepper, diced
- 5 scallions, mostly green parts, chopped
- 2 carrots, grated
Dressing
Whisk together:
- 1/4 cup raw, crunchy peanut butter (may use almond butter)
- 1/4 cup coconut water (may use water)
- 1/2 cup raw apple cider vinegar (may use rice vinegar)
Then add:
- 3 Tbsp raw honey
- 1 tsp salt
- 1 Tbsp Tamari (gluten-free soy sauce)
- 1 Tbsp raw sesame oil
Mix together the vegetables and top with the dressing. Finish with raw sunflower seeds, unsweetened coconut flakes, and/or diced avocado.
Nutrition: 2 cups salad with 1 Tbsp coconut water, 1 Tbsp sunflower seeds, 1/4 diced avocado, and 3 Tbsp dressing = 295 calories, 19 g fat, 16 g sugar, 9 g protein.
